Our Go To Tomato Pasta

This pasta is a must for anyone who loves those quick fixes and anyone who just wants something easy, cheap and healthy for dinner

Ingredients

  • Olive oil
  • 2 cloves of garlic
  • Fresh chilli, chopped
  • 2x 400g Tinned tomato
  • Pinch of salt & pepper
  • 1 tsp of granulated sugar
  • 1tsp of sun dried tomato paste

 

Method

  1. Put the olive oil in a pan, and warm slowly
  2. Peel the whole garlic cloves and cut in half
  3. add the chilli and garlic to the pan, and gently heat.. ( DO NOT allow to burn otherwise the garlic turns bitter)
  4. Add 2 cans of chopped tomatoes, salt and pepper, sugar, sun dried tomato paste and stir through ( Don’t throw away those cans just yet…)
  5. Simmer for about 20 minutes, or until reduced slightly
  6. Fill the tomato cans with water and swirl around to make sure its clean and add this to the pan
  7. Also, at this stage check the seasoning
  8. Rub some basil leaves together to allow the flavour to open, throw into the pan along with some black olives.. Completely optional!
  9. Serve! We love to serve ours with Dececco pasta, as it is egg free, therefore suitable for vegans.
