This pasta is a must for anyone who loves those quick fixes and anyone who just wants something easy, cheap and healthy for dinner
Ingredients
- Olive oil
- 2 cloves of garlic
- Fresh chilli, chopped
- 2x 400g Tinned tomato
- Pinch of salt & pepper
- 1 tsp of granulated sugar
- 1tsp of sun dried tomato paste
Method
- Put the olive oil in a pan, and warm slowly
- Peel the whole garlic cloves and cut in half
- add the chilli and garlic to the pan, and gently heat.. ( DO NOT allow to burn otherwise the garlic turns bitter)
- Add 2 cans of chopped tomatoes, salt and pepper, sugar, sun dried tomato paste and stir through ( Don’t throw away those cans just yet…)
- Simmer for about 20 minutes, or until reduced slightly
- Fill the tomato cans with water and swirl around to make sure its clean and add this to the pan
- Also, at this stage check the seasoning
- Rub some basil leaves together to allow the flavour to open, throw into the pan along with some black olives.. Completely optional!
- Serve! We love to serve ours with Dececco pasta, as it is egg free, therefore suitable for vegans.
