Rye & Spelt Bread

Hi all!  We are so sorry we haven’t posted in ages we’ve been carried away with cooking in the kitchen! If you ever miss us head over to Instagram as we are always there 🙂 This time round we have an amazing rye and spelt bread recipe for you. May i add it’s gluten free at its finest!

We added some sunflower seeds and flaxseeds into the mix to make this even more wholesome!  Another we love the most about this recipe is the no added sugar! In our opinion the olive oil gives it a rich, moist texture which is better than sugar anyway, a lot healthier!

Sadly, we do make ours with a bread machine as we do like to let it cook over night or during the day so when we come downstairs is so sublime we burn our hands getting it out of the machine.  (We suggest you use oven mitts. As believe it or not we have actually done this… DOH! )

Spelt Flour is an ancient relative of modern wheat, it has a delicious and distinctive nutty wheaty flavour. Spelt contains gluten which makes it ideal for bread making; the gluten, however is more fragile than that found in wheat, making it easier to digest. The added rye bread is purely because we love rye bread, and these two are a match made in heaven!

If like us you are using a bread machine we suggest you select the shortest cycle available (about an hour). Otherwise if left to prove too long it will rise up and then collapse. If you do not have a short cycle, use the bread machine to mix the dough and prove the bread, but once the bread is raised you can remove the tin and bake in the oven.

Ingredients

  • 1 1/2 teaspoons Fast-action dried yeast
  • 372g  spelt organic flour
  • 125g Rye
  • 2 tsp Sunflower seeds
  • 1tsp Flaxseed
  • 1 1/2 teaspoons salt
  • 335 ml warm water
  • 1 1/2 tablespoons extra virgin olive oil

Method

  1. Sift the flour into a large bowl.
  2. Add all the ingredients into your bread machine prior the instructions.
  3. If you have an automatic dispenser for nuts and seeds and the sunflower and flaxseed into there.  If not just add them into the dough with the rest of the ingredients.
  4. Cook for no longer than an hour on the shortest cycle.
  5. Slice the bread while its warm, add your desired toppings!
