Banoffee Sundae

In the recipe below we give you the most amazing recipe for milk chocolate and vanilla ice cream.  However, you could just buy the ice cream to save time.  If you are making this for someone we suggest making the ice cream as it makes it extra special.

Ingredients 

Vanilla Ice Cream

  • 125ml whole milk
  • 63ml double cream
  • 1/2 vanilla pod, seeds scraped out
  • 1 duck egg, yolk
  • 44g caster sugar
  • pinch of sea salt

Milk Chocolate Ice Cream

  • 125ml whole milk
  • 63ml double cream
  • 1 duck egg, yolk
  • 44g caster sugar
  • pinch sea salt
  • 13g cocoa powder
  • 50g milk chocolate, finely chopped

Biscuit Crumb

  • 10 digestive biscuits
  • 10g melted butter

To build

  • 2 bananas
  • 350ml double cream
  • 2 tsp vanilla bean

 

Instructions

The vanilla ice cream

  1. Pour the milk, cream and vanilla seeds into a large saucepan.  Stir gently until the mixture begins to steam.  Do not allow it to boil.
  2. Meanwhile, whisk the eggs and the sugar in a bowl until pale and creamy. Slowly add in the vanilla mixture whisking constantly.
  3. Once both mixtures are combined return back to the heat and heat on medium until it coats the back of a wooden spoon.
  4. Pour the mixture into a bowl and set in a sink full of ice for 30 minutes.
  5. Once cooled place in the fridge with a layer on cling film on the custard overnight.
  6. Now churn to the ice cream machine instructions.

The chocolate ice cream

  1. Pour the milk and cream into a large saucepan.  Stir gently until the mixture begins to steam.  Do not allow it to boil.
  2. Meanwhile, whisk the eggs and the sugar in a bowl until pale and creamy.
  3. Take the milk off the heat and whisk in the cocoa powder. Add the chocolate  and stir until its completely melted.
  4. Gradually pour the chocolate mixture into the egg mixture, whisk constantly.
  5. Once both mixtures are combined return back to the heat and heat on medium until it coats the back of a wooden spoon.
  6. Pour the mixture into a bowl and set in a sink full of ice for 30 minutes.
  7. Once cooled place in the fridge with a layer on cling film on the custard overnight.
  8. Now churn to the ice cream machine instructions.

The biscuit crumb

  1. Place the digestive biscuits into a sandwich bag and smash with a rolling pin until desires size of crumble is reached.
  2. Add the melted butter and stir with a spatula. Set aside.

Build the sundae

  1. Slice the banana how ever you would like and set this aside.
  2. Whisk the double cream with the vanilla bean until soft peaks.
  3. Add a small layer of the biscuit crumb into a tall glass.
  4. Add a scoop of chocolate ice cream.
  5. Add a layer of vanilla double cream.
  6. Add a layer of banana.
  7. Now begin the process again. Add a layer of chocolate ice cream, then vanilla cream then a layer of banana and then a nice scoop of vanilla ice cream.
  8. Serve with a spoon.
