Afternoon at Soho House Cookery School aka The Cook House

Yesterday, we spent a wonderful afternoon at Soho House Farmhouse in the cookery school learning to make Elderflower cordial and Elderflower biscuits!IMG_3657We started the afternoon off with a tour of the kitchen and produce gardens where we learnt which edible flowers we could incorporate into our everyday cooking!  so cool 🙂

We then collected and picked our Elderflowers from the Farmhouse extensive grounds to make our cordial… a process which was quite easy!  can’t believe we hadn’t tried to make this before ourselves.  see the recipe above.

Our chef, Dave was knowledgeable and intuitive and it was a delight to spend the afternoon with him.

We next made our biscuits, a light and crisp affair which we incorporated the Elderflower cordial to make a simple and short little biscuit… heaven!

recipe for the biscuits

ingredients

  • 200g plain flour, sifted
  • 75g caster sugar
  • 1 tbsp golden syrup
  • 50ml elderflower cordial

Grease a baking tray and preheat your oven to 220C.

Rub together the butter and flour between light fingertips, until the mixture resembles course breadcrumbs.

in a pan over a low heat, combine and heat the syrup and cordial.  Add to the flour and butter mixture, followed by the sugar.  mix to form your dough.

bake in the pre heated oven for 8 minutes.
